Banana and Chocolate Cupcakes

 

Ingredients:

250g Self-raising flour

1 tsp Baking powder

½ tsp Bicarbonate of soda

115g Caster sugar

55g Milk Chocolate chunks

2 Large Bananas

2 Medium eggs

125ml Milk

75g Melted butter

Chocolate Butter Icing; 

450g Icing Sugar 

150g Butter 

40ml Milk 

60h Cocoa Powder 

 

Method:

Preheat the oven to 180 degrees and line a muffin tray with 12 cases.

  1. Start by sifting the flour, baking powder and bicarbonate of soda into the mixing bowl and then add in the caster sugar.

  2. Then add in the chocolate chunks, chips or buttons.

  3. In a bowl, melt the butter and then add in the eggs, milk and mashed banana.

  4. Once all the ingredients have been combined, add the ingredients to the flour mixture and mix all the ingredients together.  

  5. Now, transfer the mixture into the cupcakes cases prepared earlier. Fill each case ¾ full to allow room for the cakes to rise.

  6. Cook the cakes in the oven for 15-20 minutes until golden brown.

  7. Transfer the cakes to cool on a wire rack once they’ve been cooked. Whilst cooling you can make the chocolate butter icing.

  8. Sift the icing sugar and cocoa powder into a bowl before adding the butter and milk.

  9. Mix the ingredients together to form a smooth, fluffy butter icing.

  10. Now transfer the butter icing into a piping bag ready to pipe on top of the cakes.

  11. Once you’ve piped the icing on top of the cakes, melt the white chocolate in a bowl over simmering water.

  12. Drizzle the white chocolate on top of the cakes and then add on the banana toppers and milk chocolate chunks. You can make the banana toppers yourself or buy them.

Banana Toppers:

  1. Slice the banana into reasonably thin slices and place them on a baking tray lined with grease-proof paper.

  2. Dust the banana slices with salt before placing them in the oven.

  3. Bake the banana for 10-15 minutes until they begin to turn golden brown, when beginning to turn brown, take the slices out the oven and turn the banana slices over.

  4. Place the banana slices back in the oven for another 15-20 minutes to cook.

  5. Once cooked, place the bananas on a tray to cool, before placing them in the fridge to cool.
