Summer Biscuits

Ingredients:

350g Plain Flour

100g Self-raising Flour

125g Caster Sugar

125g Unsalted Butter

½ Orange - juice

1 large Egg

Decorations:

500g Icing sugar

Red food dye

Yellow food dye

Coloured ready to roll icing (green)

 

Method:

Makes 24 biscuits.

Preheat the oven to 180 degrees and line a baking tray with baking parchment.

  1. Start by sifting both of the flours and caster sugar into a bowl and then using your fingertips rub in the unsalted butter to resemble breadcrumbs.

  2. Having made the breadcrumbs, form a well in the centre and pour in the beaten egg and ½ the juice of an orange.

  3. Then, using your hands, form a ball of dough.

  4. After making the dough, dust a surface with plain flour and roll out the dough onto the surface using a rolling pin.

  5. Once the dough is rolled out, using the cutters which you have or by making your own stencils, cut out the shapes.

  6. Next, place the biscuit shapes onto the prepared baking tray and bake the biscuits in the oven for 10-12 minutes until golden brown.

  7. Remove the biscuits from the oven and allow them to cool.

  8. Whilst cooling, you can prepare the icing to decorate the biscuits.

  9. I didn’t weigh out the icing sugar when I iced the biscuits, I didn’t use much icing sugar and made enough appropriate to ice the biscuits.

  10. Depending on which biscuits you have chosen to make, make up the suitable colours using icing sugar, cold water and food dye. Slowly add in the cold water and stir the mixture to ensure you get the correct consistency. Make sure that you don’t add too much water otherwise the icing will run off the edges of the biscuits.

  11. After making your icing, using piping bags, pipe the coloured icing onto the biscuits. For the fab ice creams I used hundreds and thousands for the top of the ice creams.  I used green ready to roll icing to make the top of the strawberries.

  12. You can decorate your biscuits similar to mine or feel free to use different colours and decorations.
