Mini Chocolate Loaf Cakes

Ingredients:
150g Plain Flour
30g Cocoa Powder
1 ¾ tsp Baking Powder
210g Caster Sugar
60g Unsalted Butter
X1 Large Egg
125ml Milk
Butter Icing:
300g Icing Sugar
100g Unsalted Butter
20g Cocoa Powder
25ml Milk
Method:
Makes 9
Preheat the oven to 160-180 degrees, and grease your baking tray.

Start by creaming together the butter and caster sugar and then add in the large egg. Beat the ingredients together until pale and creamy.

Next sift in the flour, cocoa powder and baking powder and mix all the ingredients together.

Add in the milk, and continue to mix the ingredients until you have a smooth mixture.

Transfer the mixture into the previously prepared tin, filling each mini loaf mould ½ full.

Bake in the oven for 18-20 minutes until slightly brown.

Once cooked, transfer each mini loaf onto a wire rack and allow to cool.

Whilst cooling, you can prepare the butter icing. In a bowl mix together the icing sugar, cocoa powder and butter. Slowly add in the milk and continue to mix the ingredients.

After you have prepared your butter icing and have a smooth chocolate icing, you can begin to ice the cakes.

Using a palette knife, spread the icing on top of each individual cake, adding as much or as little as you wish!

I then melted dark chocolate and drizzled this over the end of each mini loaf and finished each one off by grating chocolate over each cake!
