Victoria Sponge cake with a twist…

This bake involved taking a traditional cake recipe and giving it my own touch. I decided to create my own individual cakes, giving a classic Victoria sponge a little twist. These cakes were made using a Victoria sponge cake recipe but instead the mixture was separated into three layers which were then sandwiched together using strawberry jam. The cakes were then coated in vanilla butter icing from top to bottom, drizzled with dark chocolate and finished off with a sprinkling of chopped hazelnuts.
I didn’t want to over complicate a traditional Victoria sponge recipe as it’s always a favourite, however I wanted to do something different and unique. Initially I doubted whether this idea would work, and wondered whether I’d end up with 12 leaning towers of Pisa! However, I managed to master the layering and ended up with 12 individual cakes which I was rather pleased with, as were the rest of my family!
