Finally I'm back baking!

At last exams are over and my second year of uni has sadly come to an end! That second year flew by and it’s both scary and exciting to think that now I’m entering the real-world for a placement year.

I’m excited to be able to get back in the kitchen doing what I love, now that I am free of uni work! This week I decided to bake summer berry cupcakes, to try and get into the summer vibe.

These cupcakes are a simple vanilla sponge with blueberries and raspberries, topped with a white fluffy vanilla butter icing and summer berries. There’s nothing better than a classic vanilla sponge and summer berries especially when its 25 degrees outside (I’m not complaining)!
