A taste of something French!

Today’s bake was a whole new experience for me. I’ve never made eclairs before and having recently been on holiday to France, I was inspired to create my own white chocolate and raspberry eclairs. Being surrounded by so many patisseries and beautiful, delicate French desserts whilst on holiday, I wanted to recreate one of these with my own flavours. Making the choux pastry and ensuring that the eclairs were cooked inside so they weren’t soggy, were the two main challenges in this bake. Thankfully I managed to ensure that this wasn’t the case and the eclairs were cooked thoroughly.
I decided to fill the eclairs with a raspberry cream and decorate the top with a white chocolate ganache, finished off with half a raspberry filled with white chocolate and a drizzle of raspberry coulis at the end. Having tried this combination of flavours before, they both compliment each other perfectly, so I decided to use them in the eclairs.
