Bakewell Tarts...

After my Dad requested that I made Bakewell tarts having previously loved them when I made them before, I decided to take to the challenge again! As I had a day off work, I decided what better way to spend it than to listen to music and bake away in the kitchen! I first came across this recipe after having a rummage through different cookbooks looking for inspiration. After slightly tweaking the original recipe, they went down an absolute treat with those who were able to try them whilst they lasted!

I started by making the sweet shortcrust pastry followed by making the frangipane filling. This bake was fun as it involved making different components in order to produce the final Bakewell tarts. I chose to use raspberry jam in my tarts, but any preferred jam can be used. I decorated them with a drizzle of icing, a couple of blueberries and a dusting of icing sugar. I love the finish on these and find that sometimes the simpler the finish, the more effective they look!

I really enjoyed making these and am hoping my Dad will enjoy them as much as he did the first time (fingers crossed!).
