Cherry Bakewell Genoise Cake...

The Great British Bake Off is finally back and now our Wednesday evenings are sorted! Last week’s episode was cake week, and whilst I enjoyed a cup of tea and slice of cake (it’s practically impossible to not eat something whilst watching the bake off!), drama unfolded in the bake off tent! This bake was inspired by last week’s showstopper. I decided to take to the challenge of making my own Genoise cake!

Having never made a Genoise cake before, I thought I’d keep it fairly simple and not over complicate things! I chose to make a Cherry Bakewell flavoured cake, with the four tiers of sponge being almond flavoured, the layers are sandwiched together with cherry jam and iced in a light pink butter icing. The process is different to any normal bake and involves whisking the eggs and sugar in a bowl over simmering water, there’s no baking powder used in this cake, so if your whisking skills aren’t up to scratch, then you’ll end up with a rather flat cake!

I thankfully managed to master the whisking and ended up with two nicely aerated cakes. I was then able to slice these in half, sandwich all the layers together and decorate the cake.
