'I scream, you scream, we all scream for Ice Cream!'

If there’s something which goes down a treat over summer or even in winter (if you’re feeling brave), it’s an ice cream! In my eyes no summer is complete without having either an ice cream or a family gathering!

I now know when mum says were having a family gathering, one things for sure (maybe two things). One, she’s guaranteed to ask me to bake some cakes (and two it’s bound to be chaos, as what family can get together without it being ever so slightly manic!?). Seeing as I’ve had very few opportunities to indulge in an ice cream this summer, I thought I’d try and create an ice cream themed cupcake to take to our family get together!

These cupcakes are a vanilla sponge, which have been iced in white and pink butter icing. To finish these cupcakes, I decorated them with a glacé cherry, waffle and sprinkles to try and create that ice cream look. I wanted to try and get the icing as white and fluffy as possible to look as similar as possible to ice cream. Having achieved this, the overall appearance of these cupcakes is very pleasing!
