Strawberry Cheesecake Cupcakes

Two of my all time favourite things are

strawberries and cheesecake. So I thought I’d combine the two together to make a match made in heaven. (If I was a dating agency, I’d have a perfect match!)

Not only is this bake fun, the end product always goes down a treat. By taking a simple vanilla cupcake recipe and giving it my own twist, I decided that this cupcake had to be a success or something wasn’t right. These cupcakes are filled with strawberry jam and chopped strawberries, iced with cream cheese butter icing and topped with strawberries and digestive biscuits crumbs, all elements which make up a classic New York cheesecake.

The beauty about these cupcakes is that they’re fairly simple and straightforward to bake, so there’s no excuse not to try baking them, I’m sure they’ll go down a treat! You can find the recipe under the cupcakes recipe link.
