Lemon and Raspberry Meringue Tarts

Twelve, individual, identical mini tarts some may see as an easy task, well let’s just say it’s a lot easier said than done! This bake proved more difficult than I initially thought, but I got there in the end! Making a sweet pastry, lemon curd filling and white and pink meringues, I gave myself a lot to do.
Having made a sweet shortcrust pastry before, I knew how to make it and what I needed to do, which is always helpful. I then made the lemon curd using two lemons (kindly donated by my housemate!) and combined the juice and rind of these with caster sugar, butter and an egg and egg yolk over boiling water. Finally, I made the meringues using two egg whites and then separated the mixture into two bowls and coloured one pink.
I faced some challenges along the way in this bake, but then I guess sometimes things go wrong in the kitchen! Next time, I want to make the tarts slightly larger and one thing’s for sure, I want my meringue to be much pinker!
