Who doesn’t love a birthday celebration? Being in a house of girls, we know how to celebrate birthdays! No birthday is complete without balloons, banners, presents, cards, parties and above all, a cake. Every birthday has to have a birthday cake!

Seeing as my housemate loves red velvet cake, I thought there would be nothing better than to bake her a red velvet birthday cake! Having never made a red velvet cake before, I knew the hardest task would be getting the sponge to be red. I chose to make three tiers to this cake and use a cream cheese butter icing to layer the sponges together and ice the outside of the cake . I then decided to make a 20th birthday topper using red velvet biscuit crumbs and white chocolate.

Getting a red sponge proved more challenging than I expected and the overall sponge didn’t turn out being very red. Although tasting like a red velvet cake, the red sponge was missing! Next time I make a red velvet cake, I need to ensure I am able to get a red sponge, however the cake still went down a treat and everyone loved it!
Happy Birthday Nicola!
