It's beginning to look a lot like Christmas...

It's only a month til Christmas which means only one thing, it's time to get into the Christmas spirit! Having only two and a half weeks left at Uni this term, I thought I’d start getting into the festive spirit!

I decided to kick start the festive season with nothing better than my twist on mini Christmas puddings. Not being a huge fan of the traditional Christmas pudding, I chose to give this classic recipe my own touch!

I made a chocolate sponge recipe and added raisins, walnuts and cranberries to this recipe. I decided to use a muffin tin for the mould as this was the most similar shape to a Christmas pudding. I then decorated the puddings with white royal icing and finished them off with chopped cranberries on top.
