Christmas Cupcakes!

There’s nothing which fills me with more excitement than returning home from uni for the Christmas holidays! Putting up the Christmas tree and decorating the house with lights and decorations to get into the festive spirit is all part of the fun.

The smell of gingerbread spread throughout the house when making these cupcakes, making it smell like Christmas. These cupcakes are a carrot and mixed spice cupcake iced with cream cheese butter icing and topped with gingerbread men.

I loved how these cupcakes turned out, I’ve never been the biggest fan of gingerbread but making the gingerbread myself, I could alter the amount of ginger I added so it wasn’t overpowering.
