First New Year Bake!!

I should start by wishing everyone a Happy New Year!

I’m back! I never really left, I just haven’t baked anything for a while which isn't like me! Whilst I was at home over Christmas I made so many desserts and festive bakes and on my return to uni I haven’t had any time to bake anything yet. I’ve now been back for two weeks and thought I’d put the pinny back on and get baking again!

This week I chose to make a white chocolate and cranberry loaf cake. I wanted to make something which was easy to slice and share with my housemates, using ingredients which we’d all enjoy! I used a simple vanilla sponge recipe for this bake and then added in white chocolate chunks and cranberries. This cake took what seemed like forever to bake, partially because our uni oven is basically broken and also because I’m that little bit impatient when waiting for cakes to bake!
